PEPPERMINT

Peppermint is a perennial with dark green, spear-shaped leaves that come to a point. It has a neat, dense growth habit with tall stems arising from an underground network of spreading stems. Since it can be invasive, plant it in an isolated location or where it can be kept contained. It is easy to care for and likes full sun or partial shade and rich, moist soil. Take cuttings in mid-summer or divide at any time during the growing season. Use fresh or frozen leaves as garnishes, in vinegars, jellies, punches, candy, lamb--use dried leaves in teas. Pick shoots in early to mid summer. Hang dry or freeze. Some related varieties are pineapple mint, apple mint, chocolate mint and lemon mint.
