Dolores Miller's Brownies
Prep: 15 min, Cook: 40 min, plus cooling time.
- 1/2 lb. corn oil margarine
- 4 squares unsweetened chocolate
- 2 cups sugar
- 4 eggs
- 2 tsp. vanilla
- 1 cup flour
- 1/8 tsp. salt
- 1/8 tsp. baking powder
- 1 cup chopped nuts
Combine margarine and chocolate in a heavy saucepan over low heat. Whisk occasionally until melted and smooth. Remove from heat. In a mixing bowl, beat sugar and eggs. Add melted chocolate mix, vanilla, flour, salt, and baking powder. Blend and fold in chopped nuts. Bake in a greased and floured 9x13 inch pan at 350�F for 35 to 40 minutes. Cool in pan and cut into squares. Freezes well.

Dolores Miller's Green Tomato Relish
Prep: 15 min, Cook: 10 min.
- 6 green tomatoes
- 6 Granny Smith apples, peeled and cored
- 3 large onions, peeled
- 2-1/2 cups vinegar
- 2-1/2 cups sugar
- 1-1/2 tsp. ground ginger
- 1/2 tsp. ground turmeric
- 1/2 tsp. salt
Work tomatoes, apples, and onions through a food grinder or food mill. Transfer to a large strainer and drain off about 1 cup liquid. Discard the liquid. Combine remaining ingredients in a large saucepan and bring to a vigorous boil. Remove from heat and add the tomato-apple-onion mixture. Bring to a boil, reduce heat, and simmer for 5 minutes. Spoon into sterilized jars and seal for later use. Serving size is about 2 ounces.

Dolores Miller's Iced Tea
Prep: 10 min, Cook: 5 min.
- 12 black tea bags
- 2 quarts cold water
- 1 large fresh lemon, juiced, with half of lemon peel cut up and reserved
- 2 Tbs. sugar (optional), or to taste
Place tea bags in a saucepan. Add about 1/4 the water and bring to a boil. Allow to completely cool on the stove. Pour into a pitcher, add remaining water, lemon juice, lemon peel, and, if desired, sugar. Serve chilled.
You can adjust strength of tea as desired or use green tea or other tea in place of black tea.

Dolores Miller's Streuselkuchen (Crumb Coffee Cake)
Prep: 15 min, Cook: 25 min.
- 1-1/2 cups flour
- 1/2 cup milk
- 1/3 cup sugar
- 1 egg
- 3 Tbs. shortening
- 1 Tbs. baking powder
- 1/2 tsp. salt
- 1/2 cup sugar
- 3 Tbs. shortening
- 2 Tbs. flour
- 2 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/8 tsp. salt
Preheat oven to 350�F. Mix first 7 ingredients by hand. Spread in a greased and floured 9 inch cake pan or springform pan. In a bowl, combine remaining ingredients, mixing with a fork to create crumbs. Spread on top of batter. Bake for about 25 minutes. Let cool before cutting.

Dolores Miller's Toll House Kookie Brittle

- 1/2 lb. margarine
- 1-1/2 tsp. vanilla
- 1 tsp. salt
- 1 cup white sugar
- 2 cups sifted flour
- 6 ounces semisweet chocolate bits
- 1 cup finely chopped walnuts
Preheat oven to 375�F. Combine margarine, salt, and vanilla. Blend well. Gradually beat in sugar. Take off the beater and add flour and chocolate bits by hand. Spread evenly in an ungreased 15x11 inch jelly roll pan. Top with walnuts. Bake for 30-35 minutes, until golden (but not brown). Remove from oven and cut. Allow to cool. Place in covered tin�and hide it!

Doreen's Buckwheat Buttermilk Waffles
Prep: 10 min, Cook: 10 min.
- 2-1/2 cups buttermilk
- 2 cups unbleached flour
- 1 cup buckwheat flour
- 1/4 cup plus 2 Tbs. vegetable oil
- 2 Tbs. sugar
- 1-1/2 Tbs. baking powder
- 3/4 tsp. salt
- 3 eggs, with whites separated
Place all ingredients, except egg whites, in a mixer and beat on high for about 3-4 minutes. In a separate bowl, beat egg whites until moderately stiff. Fold into waffle batter by hand, until just mixed.
Preheat waffle iron. When hot, lightly brush surface with oil. Pour batter onto waffle iron to cover about 3/4 of its surface. Close cover and bake about 5 minutes, or until iron stops steaming. Open cover and use fork to remove waffle. Continue with the remaining batter. Serve immediately with desired toppings, or keep warm in 200�F oven until ready to serve.

Doreen's German Potato Salad
Prep: 15 min, Cook: 15 min.
- 1 lb. whole potatoes, with skins
- 2 ounces speck (heavy bacon), or regular bacon, cut into tiny pieces
- 1 onion, chopped
- 1/4 cup vinegar
- 3 Tbs. wine vinegar
- 1 Tbs. parsley
- 1 tsp. mustard
- salt and pepper, to taste
Boil potatoes for about 15-20 minutes, or until cooked. Run under cold water to cool slightly. Peel and cut into thin slices. Meanwhile, sautZ the bacon and onion for about 5 minutes, until bacon is cooked and onion is soft. Add remaining ingredients and the potato slices, mixing well. Serve warm.

- 3/4 cup sifted flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 4 eggs, warmed to room temperature
- 3/4 cup sugar
- 1/4 cup confectioner's sugar
- 1/2 package chocolate instant pudding
- 2 cups whipping cream
- 1 cup dark cherry fruit spread, optional
Sift flour with baking powder and salt. Set aside. At high speed, beat eggs until thick and lemon-colored. Beat in sugar 2 Tbs. at a time, then beat 5 minutes longer until thick. With spatula gently fold in flour mixture until combined.
Turn into a lightly greased and wax-lined 15x10 inchjelly roll pan. Bake 9 minutes at 400�F until surface is springy.
On a clean towel sift confectioner's sugar to form a 10x15 inch rectangle. Invert cake onto sugared towel, peel off wax paper, and roll up - towel and all - from the narrow end. Place seam down on rack to cool, about 20 minutes.
In a bowl, beat the instant chocolate pudding and whipping cream. Unroll cake and remove towel. Top with a layer of dark cherry fruit spread (optional) and a layer of the sweetened whipped cream. Roll up the cake again from narrow end. Slice a 1 inch to 1-1/2 inch piece off the end and place at mid-section along the side (for branch effect). Frost with remaining whipped cream. With a fork, impress grooves into the whipped cream to imitate bark and wood grain. Decorate as desired. Suggestions: red and green M&Ms, Craisins, plastic holly, plastic evergreen branches.

Doreen's 'Date a Nut' Bread

- 2 cups all purpose flour
- 1 Tbs. baking powder
- 1/4 tsp. salt
- 1 tsp. ground cinnamon
- 1/4 tsp. ground allspice
- 1 cup pitted dates, chopped
- 1 cup chopped pecans
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 1/4 tsp. almond extract
- 2/3 cup lowfat milk
Preheat oven to 350�F. Sift first 5 ingredients together in a bowl. Combine 1/4 cup flour mixture with chopped dates and nuts in another bowl. Combine butter and sugar in a mixing bowl and beat with an electric mixer until light and fluffy. Add eggs one at a time, beating thoroughly after each addition. Add almond extract and beat another 2-3 minutes. Add dry ingredients alternately with milk, beating after each addition. Fold in date and nut mixture by hand. Spoon into 4 well-greased mini-loaf bread pans (6x3 inch) and bake 25-30 minutes until a tester comes out clean when inserted in center.

Mary Ellen's Winter Solstice Soup

- 2 sweet potatoes, peeled and chopped
- 2 white potatoes, peeled and chopped
- 1 parsnip, peeled and chopped
- 1 rutabaga, peeled and chopped
- 1 onion, peeled and chopped
- 3 carrots, peeled and chopped
- 1-1/2 cups butternut squash, peeled and chopped
- 1 quart plus 2 cups water, or favorite stock
- 1/8 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- 1/8 tsp. ground ginger
Add first 8 ingredients to soup pot. Bring to a boil, reduce heat, and simmer for 50-60 minutes, or until vegetables are soft. PurZe with hand blender or in blender in batches. Stir in spices before serving.
