Rhubarb Cordial
Ingredients: 5 pounds of rhubarb 2 tablespoons grated lemon rind 3 quarts water 1/3 cup lemon juice 1 or 2 cups of sugar (to taste)
Procedure: Cut rhubarb into chunks Combine with lemon and water in a large saucepan Bring to a boil and simmer until rhubab is tender Stir in lemon juice. Strain through a cloth Stir in sugar and bring to a boil. |
