| SEA Parents, One of the things I hate most after swim practice is to get a good meal ready in a short time. I need something that is quick, easy and good for Robert. This Section is going to be a place to exchange recipes that take 30 minutes or less from walk in the door until on the plate. Some will be quick and nutritious and some will be carbo-packing meals for before meets. Please send in your own favorites so we can all share and expand our repertoire. Thanks, Brenda BASIL AND TOMATO SPAGHETTI: Make pasta the way you usually do. I usually use thin spaghetti because it cooks faster. For one pot�s worth, (about 12 oz of pasta or a large fist full) mince 5 cloves of garlic, put onto hot olive oil. Do not let brown � just get transparent. Throw in 2 T dried basil then a large can of whole tomatoes. Crush them up (being careful �cause they squirt). Let simmer until the pasta is done and drained. Toss garlic mixture with pasta and then add � C Parmesan cheese and 8 oz of grated mozzarella. PASTA MIT OLIO AND KNOBLOCH (FROM OUR FAVORITE RESTURANT IN WIESBADEN) 1 box of rigatoni 5 cloves garlic � C olive oil � t red pepper flakes 2 T fresh-chopped parsley or cilantro Fresh grated Parmesan cheese Cook rigatoni according to package, cook garlic in hot olive oil until transparent then add the red pepper flakes. Add parsley right before adding hot mixture to drained pasta. Sprinkle with cheese and serve. |
