Ingredients:
1 1/2 Lbs. beef tenderloin or boneless sirloin, cut into 2-inch-thick pieces
1/4 cup olive oil
1/4 cup red wine vinegar
1 onion, finely chopped
1/2 cup chopped fresh parsley
4 cloves garlic, finely chopped
1 tsp. salt
1/2 tsp. pepper
12 whole bay leaves
Directions:
Place beef in a large baking dish. Add oil, vinegar, onion, parsley, garlic, salt, pepper, and bay leaves. Let stand for 30 minutes.
Meanwhile, preheat grill. Remove beef and bay leaves from marinade. Place beef on grill rack. Place a bay leaf over each piece of beef.
Grill beef, turning and basting several times, for 15 minutes for medium rare.
