Ingredients:
3 lbs. pork butt, cut into chunks
1/3 cup lemon juice (about 2 lemons)
1/2 tsp. fennel seeds
5 cloves garlic, chopped
5 whole cloves garlic
2 tbsp. olive oil
3 onions, cut into wedges
2 bay leaves
1/2 tsp. salt
3 oz. bacon chopped
1 (15-oz.) can chopped tomatoes, drained
Directions:
Combine pork, lemon juice, fennel seeds, chopped and whole garlic, olive oil, onions, and bay leaves in a large baking dish; stir well. Cover; chill for 20 minutes.
Preheat oven to 350 degrees. Sprinkle bacon over pork in baking dish.
Roast pork, turning occasionally, until partially cooked, about 20 minutes.
Add tomatoes to dish. Roast for 20 minutes longer. Remove bay leaves. Serve hot or at room temperature.
