Poulet Vallee D'Auge

Ingredients:
1 lb. chicken breast, skinless & boneless
1/4 cup butter
1 tbsp. brandy
1 tbsp. chives, chopped
1 tbsp. parsley, chopped
1/8 tsp. dried thyme, crumbled
1/2 tsp. salt
pepper to taste
1/4 cup sauterne
1/4 cup heavy cream

Directions:
Wash and dry chicken. In a heavy frying pan, brown slowly in butter. Lower heat and continue cooking, uncovered, for 15 minutes, turning occasionally.
Pour in brandy and ignite; shake pan until flame dies. Add chives, parsley, thyme, and sauterne. Cover and cook until chicken is tender, about 45 minutes.
Remove chicken to a platter and keep warm. To make sauce, add cream slowly to drippings, stirring rapidly to blend smoothly. Pour over chicken to serve.
