Pollo al Ajillo

Ingredients:
1/2 cup olive oil
2 1/2 lbs. chicken, cut in small serving pieces
salt and pepper
2 tbsp. garlic powder
1 clove garlic
1/2 cup water
juice of 1 lemon
saffron, a few strands, diluted and crushed in very small amount of water

Directions:
Heat oil in large skillet. Add chicken pieces and cook over moderate heat until golden brown. Remove chicken from skillet, leaving oil in skillet.
Salt and pepper chicken. Pour off all but 4 tbsp. of oil in skillet.
Add garlic and garlic powder. Stir in water and bring to a boil. Remove from heat and add chicken to skillet.
Add lemon juice and saffron. Cook covered, over low heat for about 15 minutes or until meat is tender
Serve, spooning sauce over chicken.

Comments:
This dish can be bland if made incorrectly. Salt and pepper the chicken well and it turns out quite nicely.
