Ingredients:
1.5 lbs. chicken breasts
2 tbsp. canola oil
1/2 cup chopped onion
1 cup chicken broth
1 tsp. fennel
1/2 tsp. cayenne
1/2 tsp. salt
1/2 tsp. black pepper
2 tbsp. lemon juice
1/4 cup heavy cream
1/2 cup sour cream
Directions:
Preheat oven to 350 degrees.
Heat oil in a large skillet over medium heat. Add chicken; brown on all sides; about 15 minutes. Arrange chicken in a baking dish.
Saut� onion in pan drippings for 5 minutes. Add half broth, heavy cream, paprika, salt, lemon juice, cayenne, black pepper, and fennel; mix well. Reduce heat to low.
Stir remaining broth and sour cream into skillet; mix well. Heat sauce to serving temperature. Do not boil.
Spoon sauce over chicken. Bake covered, for 20 minutes or until chicken is tender.
