Ingredients:
4 tbsp. butter, melted
6 chicken breast halves (about 3 lbs.)
1/2 cup celery, chopped
1/2 bell pepper, chopped
1 can (4 oz.) sliced mushrooms, undrained
1 cup sour cream
1 tsp. salt
1/2 cup onion, chopped
1/4 tsp. pepper
Directions:
Sauté chicken in butter until lightly browned. Arrange chicken in a lightly greased casserole dish. Set aside.
Sauté onion, celery, and bell pepper in chicken drippings until tender. Remove from heat and let cool slightly.
Combine the vegetables, mushrooms, sour cream, salt, and pepper. Spoon mixture over chicken.
Cover and bake at 350 degrees for 45 to 55 minutes, until chicken is cooked through.

I made this dish using turkey breast rather than chicken and added a sprinkle of cayenne. It turned out wonderfully.
