Ingredients:
3 tbsp. butter
4 skinless, boneless chicken breasts (about 5 oz. each), pounded to 1/4-inch thickness
1 tsp. dried oregano
1/4 tsp. pepper
4 thin slices prosciutto or ham
4 slices mozzarella cheese
1/4 cup dry white wine or 1/4 cup chicken broth with 1 tbsp. lemon juice
Directions:
Melt butter in a large skillet over medium heat. Add chicken; cook for 3 minutes on each side. Sprinkle with oregano and pepper.
Place a slice of prosciutto over chicken. Place a slice of mozzarella over prosciutto. Drizzle wine over each piece of chicken.
Cover; cook chicken until juices run clear when meat is pierced with a knife and cheese is melted, about 5 minutes.
