Chicken Cacciatore

Ingredients:
5 Lbs. mixed chicken parts
1/2 cup olive oil
1/2 stick butter
1 1/3 cups chopped onions
3 cups mushroom caps, thinly sliced
4 cloves garlic
1 cup white wine
2 bay leaves
2 tsp. oregano
1 tsp. freshly ground pepper
3 Tbsp. brandy
1 cup sun-dried tomatoes
salt to taste

Directions:
Soak tomatoes in hot water and set aside.
Saut� chicken in half olive oil, half butter, on all sides until golden. Set aside.
Heat remaining oil and butter in skillet and saut� onions until light golden. Add mushrooms and garlic.
Continue saut�ing until soft.
Place chicken parts in Dutch oven and pour onion-mushroom mixture on top of chicken.
Pour in wine and add drained tomatoes and remaining ingredients.
Cover lightly and simmer 30 minutes or until chicken is thoroughly cooked through.
