Indian Shrimp (serves 6)




 


    Ingredients -
1 cube boullion (chicken or veggie)
1/4 C water
1/2 sweet onion, coarsely diced
1/2 green bell pepper, coarsely diced
1 zucchini, sliced
1 small tomato, coarsely diced
1/2 C raisins
1/4 C pineapple chunks, drained
1 T lemon juice
2 lbs shelled shrimp

1 1/2 tsp. cinnamon
1/2 tsp. fresh grated ginger
1/2 tsp. turmeric
1/2 tsp. cumin
1/2 tsp. salt
1/4 tsp. cayenne pepper
white pepper to taste
1 T flour

    Procedure -

Heat 1T olive oil in a deep sauce pan at low. Check a clock.
Slice the onion 1/4" thick, dice and to the hot pan. Raise heat to medium and cover. Keep the pan covered for remaining cooking steps until adding shrimp.
Dice the bell pepper and add with bullion and water to onions.
Start shelling the shrimp while the onions and pepper simmer for 10 minutes.
Slice zucchini 1/8" thick and add to mix.
Slice tomato 1/4" thick, dice and add to mix. Reduce heat to low.
In a small bowl, mix the dry spices without the white pepper. Spoon off the broth from the saute pan into the bowl and add lemon. Mix well and add to the vegetables. Add raisins and pineapple and mix together with vegetables and spices.
Finish shelling shrimp. If it takes more than 10 minutes, turn heat off the pan.
Sift flour over the mix and dust with pepper. Stir well and taste. Add pepper as needed. Raise temperature to medium high.
Add shrimp when mixture begins to simmer. Stir well. When the shrimp has just turned pink (aprx 3 min.), remove from heat and continue to stir.

    Notes -

Timing is everything on this dish. You can do most of the preparation steps for each ingredient while the mixture cooks. The ingredients cook for different lengths of time, but they are added in sequence to give adequate time to each one. Total preparation should be about 30 minutes. If it takes you more than 15 minutes to shell the shrimp, do that ahead of time.
Rice goes well with this dish and should be started cooking when you begin the process. Start brown rice or wild rice 15 minutes before this process.

You can substitute chicken for the shrimp. Cut breasts into 1" cubes and add at the end. Cover and stir once every 2 minutes. Cook 10 minutes.
