Seven Minute Frosting
 


     Ingredients -
 
  2 large egg whites
  1 1/2 cups white sugar
  1/3 cup water
  1 1/2 teaspoons light corn syrup
  1 teaspoon vanilla extract

 
  Equipment -

  All of the recipies I have read recommend to use a double boiler and to not allow water to touch the bowl. But I dislike the huge amount of steam and heat created in the kitchen. Instead, I nest a 2 quart pot inside a 3 quart pot and add water till the inside pot floats.


Procedure -
 
  Start the water heating in the 3 quart pot.
  Add all but the vanilla to the smaller pot and beat for 30 seconds.
  Set into the boiling water and beat constantly on high for 7 minutes.
  Up until the last 2 minutes, the mixture will change very little.
  But in those final minutes, it will expand to fill the pot and stand soft peaks.
  Remove from heat. Add vanilla and beat another minute.
  Fills and frosts a 9 inch 2 layer cake.
 

Notes -

This is frosting is the best. Its texture is light and it contains no oil. Flavors other than vanilla may be added to vary it for a wide variety of cakes. However, chocolate does not work well. After 5 hours, the frosting will develop a light crust. Keep it well covered in a cake-safe.
