Red Pepper Sautee
This recipe is so ridiculously simple that you'll be sceptical it can taste so good. But it does!
Ingredients:
Place the peppers and tomatoes in the pan with about 2 ounces of water. Cover and cook over medium heat until the peppers are soft, the tomatoes are melted, and there's a fair bit of liquid in the pan. I've tried variations using other colours of pepper, and adding in onions and garlic, but it doesn't get better than this simple combination. I do like a saucy variation of this: add another tomato and puree the veg after they're cooked. It's gorgeous with sweet root veg such as carrots and parsnip. Of course you can use it in Mediterranean food, but I like the unconventional combination above. Finally, many thanks to Margaretta and John, who first served this to me. |
