Brown soda bread

This recipe has been designed as a cholesterol buster - there's lots of fibre, and estrogen-rich soy milk, which positively impacts cholesterol levels. However, you can make it with cow's milk if you like - most soda bread is. Half a slice is equal to the carb in one slice of white pan - if you weigh your food, it's a good idea to use the scales once or twice to get an idea of how to match this bread to your insulin.

Once you get the hang of making this, you'll have it in the oven five minutes after you've taken the ingredients out of the press. I hope that will give you as much satisfaction as it gives me.

Lastly, the most important thing you need to know about this recipe is: It's absolutely delicious!

Ingredients:

  • 10 oz. wholemeal flour
  • 6 oz. plain flour
  • 1 oz. oat bran
  • 3/4 tsp. bread soda (baking soda)
  • pinch salt
  • as many poppyseeds as you care for
  • 11 fl. oz. soy milk
Preheat the oven to 200 degrees celsius. Grease and flour a 2 pound baking tin. Put all the dry ingredients in a mixing bowl and fluff them together with a fork. Pour in the soy milk and mix together thoroughly. Pour batter into baking tin and bake for approx. 1 hour, or until the bottom makes a hollow sound when you knock on it.

Cool for ten minutes before eating.
