Asian Cellophane Noodle Salad with Sesame Dressing



When you're looking for a light, refreshing vegan salad or main dish, this Asian-inspired recipe fits the bill. You can serve guests a portion of sesame-laced cellophane noodles with the vegetables artfully arranged on the plate. Or let kids and picky eaters choose their own vegetables to garnish the salad. To save time, prepare the vegetables up to a day in advance. Toss leftover vegetables and dressed noodles together, and store, refrigerated, for up to three days.

INGREDIENTS:

  • DRESSING
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon white or light brown sugar
  • 4 tablespoons water
  • 2-3 tablespoons sesame oil
  • 3 tablespoons toasted sesame seeds
  • SALAD
  • 1/2 lb. cellophane noodles
  • 2 scallions, rinsed, peeled and cut in 1/8-inch slices
  • 1 cup cubed cucumber (~ 1 medium cucumber) -- leave skin on
  • 8 radishes, julienned
  • 1/2 yellow or red pepper, julienned
  • 1 medium carrot, julienned
  • OPTIONAL GARNISH
  • arugula or lettuce leaves, rinsed and drained
  • fresh cilantro leaves, rinsed, drained and coarsely chopped
  • small red chili, rinsed, de-seeded and cut in thin slices

PREPARATION:

Prepare dressing and set aside:

Whisk together rice vinegar, soy sauce, sugar and water.

Whisk in sesame dressing vigorously, a little at a time, until thorougly blended.

Whisk in sesame seeds.

Prepare salad:

Prepare all vegetables and garnish according to ingredient listing.

Bring water to boil in a medium or large sauce pan.

lay in noodles and remove from heat. Let stand, covered, 3-5 minutes.

Strain noodles and rinse them under cold tap water. Let drain thoroughly.

Serving instructions:

Divide noodles into portions. Place in bowls lined with arugula or lettuce leaves. Arrange vegetables on or around noodles. Spoon two tablespoons drssing over ech portion. Garnish with cilantro and chili slices if desired.
