Asian Cellophane Noodle Salad with Sesame DressingWhen you're looking for a light, refreshing vegan salad or main dish, this Asian-inspired recipe fits the bill. You can serve guests a portion of sesame-laced cellophane noodles with the vegetables artfully arranged on the plate. Or let kids and picky eaters choose their own vegetables to garnish the salad. To save time, prepare the vegetables up to a day in advance. Toss leftover vegetables and dressed noodles together, and store, refrigerated, for up to three days. INGREDIENTS:
PREPARATION: Prepare dressing and set aside:Whisk together rice vinegar, soy sauce, sugar and water. Whisk in sesame dressing vigorously, a little at a time, until thorougly blended. Whisk in sesame seeds. Prepare salad: Prepare all vegetables and garnish according to ingredient listing. Bring water to boil in a medium or large sauce pan. lay in noodles and remove from heat. Let stand, covered, 3-5 minutes. |
