| Vegetable Lo Mein 12 � 16 oz. linguine 1 onion, sliced 1 tbsp. minced garlic 1 red and/or green pepper, sliced 1 cup broccoli flowerets 8 oz. mushrooms, sliced 1 zucchini, sliced 1 pkg. Baked tofu (oriental style), diced 1 tsp. ground ginger 1 � 2 tbsp. light soy sauce 1 tbsp. corn starch Directions: Cut up all the vegetables. Cook linguine according to package directions. Steam-fry veggies (cook zucchini last) in a little water, add soy sauce, ginger and the garlic. Cook veggies until crisp-tender. Add baked tofu when the veggies are done and heat. Mix the cornstarch with a little water and add to the veggie mixture to thicken. Drain noodles and then add to vegetable mixture and toss. Add more soy sauce (to taste) before serving. |
