| Sweet and Sour Veggies Chopped fresh veggies (whatever I have on hand...onions, green and red pepper, broccoli, carrots, pea pods, etc.), saut� them in water & soy sauce, add some garlic and fresh ginger. When veggies are crisp cooked, add a can (or two, depending on the amount of veggies used) of pineapple chunks with juice (get the kind packed in their own juice), a little rice vinegar, brown sugar and a little more soy sauce. Simmer for a few minutes, then add a couple tablespoons cornstarch mixed with water and cook until it thickens. Serve on a bed of brown rice. NOTE: This is one of the easiest recipes I've ever made and luckily, it's one of my family's favorite! Enjoy! |
