SANDWICH/SALADS
PITA STUFFED
WITH
CHICKPEA SALAD
1 can chickpeas (garbanzos), rinsed and drained
1 tbsp. finely diced onion
1 tbsp. finely diced celery
1 tbsp. sweet pickle relish
1 tbsp. finely diced peppers (red, green and/or yellow)
2 - 3 tbsp. fatfree Nayonaise (or may use homemade tofu mayo)
1 tsp. mustard

pitas
lettuce
sliced tomatoes

Mash chickpeas with a potato masher, add next 6 ingredients and mix well.  Slice pita in half and open. Fill each half  with lettuce and tomato, and approximately two tablespoons chickpea salad. 
ENJOY!!

NOTE: 
This salad is delicious served on a bed of lettuce and sliced tomatoes.  Also makes a delicious filling for stuffed tomatoes (see below).  You can omit the Nayonaise & mustard and mix in a fatfree Italian salad dressing for a delicious change of pace (MWL friendly).
