POTATO PANCAKES

3 � 4 large potatoes, peeled and finely grated
1 small onion, grated
salt and pepper
1/2 to 3/4 cup flour



Mix grated potato, onion, salt and pepper.  Add flour until mixture forms a pancake batter like consistency.  Spoon by tablespoon onto a heated griddle sprayed with a little pan spray, to form pancakes.  When first side is browned, turn over and brown other side.  Keep warm until all pancakes are cooked. Serve immediately with a vegetable (we like fresh green beans) and stewed apples.





STEWED APPLES

6  - 8 apples (I use Macintosh), peeled, cored and quartered
1/2 tsp. cinnamon (or one cinnamon stick)
4 or 5 cloves
1 cup apple juice
1 cup water
1 tsp. lemon juice


Put all ingredients into a large saucepan and simmer until apples are quite tender (almost mushy), 45 minutes or so (adding more water, if necessary).  Remove cloves (and cinnamon stick, if used)  and serve.
