| When I was a kid, one of my favorite meals was one my mom called 'Hobo Casserole' which I suspect came off the back of some product packaging. It consisted of meat, potatoes, canned corn and cream of mushroom soup. It was wrapped in foil and baked in the oven. Everyone in our family loved these and mom made them for us often! When I got married and had children, I carried on the tradition by making these foil packets a part of our camping experience. My kids loved them. Now, I've taken them even further, making them healthier and fat-free! We eat them often now! |
| Ingredients per packet: 1 - 2 potatoes (I prefer red but any kind will work), unpeeled and cut into chunks 1 - 2 slices onion 1/4 cup shredded cabbage 1 cup (approximately) fresh or frozen vegetables (carrots, green beans, corn, mushrooms, etc.) 3 - 4 tbsp. liquid (gravy, soy sauce, water, etc. I like to use leftover Garlicky Cream Sauce) pepper to taste (depending on what liquid you chose, you may want to add a pinch of salt) parsley (may use fresh or dried) to taste may use other herbs & spices to taste, depending on what liquid you chose. (I like to use a mixture from Shilling called 'Garlic & Herb Seasoning' ) Also need per packet: a rectangular sheet of aluminum foil AND a rectangular sheet of parchment paper. Tear off a rectangular sheet of aluminum foil and lay it shiny side down. Cover it with the same size sheet of parchment paper. Place the potatoes, onions, cabbage and other veggies in the center, piling one on top of the other. Sprinkle spices on top, then drizzle the liquid over everything. Carefully pull the long ends of both the foil and parchment (keep them together) toward each other, meeting in the center. Fold down but do not push flat. Fold up each side carefully, forming the above packet. Place the packets on a baking sheet (should hold 6 - 8 packets) and bake in a 350 degree oven for 45 minutes to an hour (depending on the size of the packets). Another variation: I sometimes make these with a veggie burger on the bottom, onions, potatoes & veggies on top and veggie gravy drizzled over all. Yummy! |
