Sweet & Spicy Thai Stir-fry

Sweet and Spicy Thai Stir-fry

4 bell peppers (green, red, orange & yellow or any combination), chopped
1 shallot (or use red onion), chopped
1 clove garlic, minced
1 can baby corn
1 cup snow peas
1 Tbsp. diced jalepeno pepper (I used canned but watch the hotness level)
1 cup bean sprouts
1 jar sweet red pepper Thai sauce
1/2 cup sweet plum sauce
3 Tbsp. soy sauce
1 package lo-mein noodles (I used linguine), cooked

In a large wok, stir-fry peppers, shallot & garlic in a little water.  Add baby corn, snow peas, jalepeno pepper and bean sprouts and continue to stir-fry.  Add red pepper Thai  sauce, plum sauce & soy sauce. Simmer. Add lo-mein or linguine and toss well to coat. Enjoy!
Yellow Rice

1 cup brown rice
2 cups water
1 1/2 tsp. ground turmeric
2 Tbsp. sugar or other sweetner

I put everything into my rice cooker and set the timer for 1 hour.  Perfect yellow rice!
