Spicy Black Bean Soft Tacos
This recipe is delicious as a taco salad for those that don't want tortillas.

Ingredients:
Spicy black beans (see recipe below)
1-package tortillas (may use flour, corn or whole wheat)
Shredded lettuce
Diced tomatoes
Diced onions (white, red or green)
Salsa

Optional toppings:
Soy cheese
Vegetarian sour cream
Chopped black olives
Guacamole

Make beans according to directions.  Heat tortillas.  Place a scoop of beans onto tortilla and add toppings of choice.  Roll up and enjoy!


Beans:

2 cans black beans, rinsed and drained
1 � 2 cloves garlic, minced
1 medium onion, finely diced
1 red or green pepper, diced
1 can (4-oz. size) diced green chilies
� - 1-tsp. cayenne pepper (depends on how spicy you like it)
2 cups water

Place all ingredients in a saucepan and simmer on low for 20 minutes or so (water should be absorbed). Remove from heat and serve immediately.

Note:  May add additional vegetables (corn, zucchini, etc.) to beans for variety.
