| Kwag's COWBOY SOUP 1 medium onion, chopped 1 can of black beans 1 can of Great Northern beans 1 can of pinto beans 1 can of kidney beans 1 2.5 ounce package of taco seasoning mix 1 2 ounce package of Hidden Valley dry Ranch Dip (the dressing mix has whey in it) 1 30 ounce can of chopped tomatoes frozen corn (optional) In a large soup pot, saute onion in a bit of water until soft. Add the remaining ingredients and heat thoroughly. Oh, do not drain the beans! This is incredibly fast and easy, and it can be the start of lots of other meals. You can use it for tacos or taco salad or serve it over baked tortilla chips or with cornbread or well, you get the idea. I usually put corn in mine to make up for the meat that was in the original recipe--Sally leaves the corn out. If you want a spicier soup, you can use tomatoes with green chiles. Jan Tz's Potato Soup 2 cups diced peeled potatoes 1/2 cup chopped onion 1 and 1/2 cups soy or rice milk 1 tsp. salt, or to taste 1 tsp. dried parsley Put it all in a saucepan. Simmer until the spudz are soft. Mash some of the spudz against the side of the pan with the back of your spoon. That's all! Don't let this boil, just simmer it. |
