Poorman's Pie

1/2 med onion, chopped
1 clove garlic, minced (may use garlic powder)
1 cup veggie burger crumbles (optional)
1 can corn kernels
1 can cream-syle corn
mashed potatoes
paprika

Saut� onion and garlic in a little water, add crumbles, corn kernels and cream-style corn.  Heat for 5 - 6  minutes, stirring constantly to keep from sticking.  Pour into a casserole dish, spread mashed potatoes over the mixture and sprinkle with paprika.  Bake in 350 degree oven until bubbly (approximately 30 - 40 minutes).

Pizza Pie Casserole


2 - 3 cans refrigerator biscuit dough (or favorite bread dough recipe)

1 small onion, minced
1 clove garlic, minced
1/2 cup veggie burger crumbles (optional)
1/2 cup veggie peperoni slices (optional)
2 cans mushrooms (may use fresh), drained
1 sm. jar waterpacked artichoke hearts, drained & chopped (optional)
1 can pizza sauce
1 can French-cut green beans, drained

Optional topping:  Soy cheese

In a large baking dish, pat out the dough to form an even layer on bottom and sides of dish.  Bake at 375 degrees for 10 minutes.  While crust bakes, saut� onion and garlic in a little water. Add remaining ingredients and heat for 5 minutes. Remove crust promptly after 10 minutes and with a fork, flatten dough.
Pour mixture into crust, top with optional soy cheese and return to oven for 15 minutes more.  Serve immediately.
