FRY BREAD

3 cups flour
1 tbsp. baking powder
1/2-tsp. salt
1 1/3 cups warm water
cooking oil.

Mix flour, baking powder and salt. Add warm water and knead till dough is soft, not sticky. Pull off a ball of dough, stretch and pat it out into a 5" circle. Poke hole in center and drop into a skillet of hot cooking oil. Brown on both sides. Serve hot. Can be served with honey or dusted with powdered sugar as a dessert.

For fat free version, bake �fry� bread in 375 degree oven for 10 � 12 minutes.
INDIAN TACOS

fresh cooked fry bread (recipe above)

4 cups cooked (may use canned) beans (any kind or combination: kidney, pinto, black, etc)
1 can diced tomatoes
1/2 cup diced onion
1/2 cup diced red & green pepper
1 pkg. taco seasoning mix

Saut� onions and peppers in a little water, add tomatoes, beans and taco seasoning.  Simmer 30 minutes and serve.

Put fry bread on individual plates, top with a scoop of bean mixture and as many topping as you like.

Toppings:

Soy cheese
Shredded lettuce
Diced tomato
Diced red and green peppers
Diced onion
Chopped black olives
Salsa
Vegetarian sour cream
Diced avocado or guacamole
My family loves Indian tacos and I usually make my 'fry' bread with low fat frozen bread or roll dough, baked in the oven.  At the request of someone, I tried this recipe for fry bread and it worked quite well baked in the oven rather than fried in oil.
