| The creation of India Pale Ale (IPA) during the early 1700s was the result of tremendous efforts by British brewers to overcome a difficult problem: beer did not keep well on long ocean voyages bringing supplies to soldiers in India. The hot environment resulted in the arrival of flat, sour beer. Before refrigeration and pasteurization, the brewer's only weapons against spoilage were alcohol and hops. Alcohol provided an unfriendly environment for microbes and the hops prevented the growth of the bacteria that cause sourness. Therefore high alcohol content and high hopping rates could protect beer from the souring associated with long storage times. This led to the creation of IPA as well as happy British soldiers in India who enjoyed the unspoiled ale.
Our Flagship Ale � Sampson Suds IPA is brewed in 5 gallon batches by hand with only the freshest 100% all natural ingredients. Our IPA continues in the English tradition of high hopping rates with a higher then normal alcohol content (5.6%� 6.1% depending on the brewmasters mood). This full bodied ale is surprisingly easy drinking � striking just the right balance of 2 row malt barley to slightly offset the bitterness of the hops. Characterized by a robust copper color and a full creamy head, Sampson�s IPA is a great choice for any occasion! |
