Ingredients:
1 C. Butter, at room temperature
2 C. Sugar
1 C. Flour
1/4 C. Bourbon
4 Eggs
2 C. Black walnuts or pecans, chopped
2 C. Chocolate chips
2 Unbaked pie shells
Procedure:
Cream together the butter and sugar
Add the flour and mix well
Add the bourbon, then eggs and beat until fluffy
Fold in the walnuts and chocolate chips
Pour into pie shells. Bake in a preheated 350°F oven for about 25
minutes, do not overcook
Notes:
Use semi-sweet chocolate chips
Can be garnished with such items as whipped cream, chocolate spinkles,
fresh mint and walnuts or pecans at service time
Million Dollar Peanut Butter
Pie:
Ingredients:
3 Eggs
1 C. Sugar
1 C. Corn syrup
1/3 C. Peanut butter
1/2 t. Vanilla
1 Unbaked pie shell
Procedure:
In a large mixing bowl, beat eggs, sugar, corn syrup, peanut butter
and vanilla together
Pour the above mixture into the pie shell
Bake 15 for minutes in a preheated 400°F oven. Reduce the heat to
325°F and bake until the filling is set, about 30 to 35 minutes more
Allow to cool and serve
Notes:
Can be garnished with chopped peanuts, whipped cream, chocolate curls,
fresh mint, etc.
Ingredients:
9 inch Graham crumb crust
2 T. Cream de menthe
1/2 C. Crushed peppermint candy
1 qt. Vanilla ice cream
1 oz. Semi-sweet baking chocolate, grated
Procedure:
Prepare crumb crust and set aside
Place the ice cream in large mixing bowl. Cut into squares. Microwave
at 10% (low) for 3 to 4 minutes, or until it has softened
Add creme de menthe, chocolate and half of peppermint candy. Beat
until smooth. Spoon into prepared crust
Sprinkle with remaining candy
Freeze for about 5 hours, or until it is firm
Portion, garnish and serve
Notes:
If your microwave oven does not have a 10% setting, microwave at 30%
(medium-low) for 2 1/2 to 3 1/2 minutes, or just until it has softened
Can be garnished with sprigs of fresh mint, whipped cream, chocolate
curls or sprinkles, etc.
Ingredients:
1 pint Fresh strawberries
2/3 C. Sugar
1/8 t. Salt
1 T. Lemon juice
1 T. Unflavored gelatin
1/2 C. Cold water
1 C. Evaporated milk, chilled
1 t. Vanilla
1 Graham cracker pie crust
Whipped cream
Procedure:
Wash and hull strawberrie,; cut into small pieces
Add sugar, salt and lemon juice. Chill one hour or more
Soften gelatin in water for 5 minutes, then dissolve over boiling
water in a double boiler
Add the strawberry mixture
Whip the milk until very stiff and fold into strawberry mixture
Fold in vanilla, turn into crust and chill until firm
Garnish with berries and top with whipped cream
Notes:
Can also be garnished with sprigs of fresh mint, chocolate. etc.
Ingredients:
1 C. Sugar
4 T. Cornstarch
2 Eggs, lightly beaten
1/2 C. Butter or oleo, melted
3 T. Bourbon
6 oz. Chocolate chips
9 inch unbaked pie crust
Whipped cream
1 C. Finely chopped pecans
Procedure:
Combine the sugar and cornstarch, beat in eggs, mix in butter,
bourbon, chocolate chips and pecans
Pour into pie shell
Bake in a preheated 350°F oven for 40 minutes, or until puffy and
lightly browned. Cool completely
Serve with whipped cream made by beating 1/2 cup heavy cream with 1
tablespoons powdered sugar in a small bowl to soft peaks. Add 1 teaspoon
bourbon or 1/2 teapsoon vanilla and beat to stiff peaks
Notes:
One teaspoon of vanilla can be used in place of the bourbon
Can be garnished with sprigs of fresh mint, chocolate sprinkles or
curls, etc.
