Ingredients:
4 To 6 Portions of cooked pasta
1/2 C. Butter
2 Shallots, fine dice
2 C. Fresh grated parmesan cheese
1 C. Heavy cream
Salt
Generous amount of fresh crushed black peppercorns
Procedure:
Sauté shallots in butter
Add cooked pasta
Over med. to high heat add cheese and cream in batches tossing between
them
Season to taste
Notes:
Fettuccine noodles are usually used
Crushed pepper instead of ground
Ingredients:
2 To 4 Portions of cooked pasta
4 T. Olive oil
1/2 Purple onion, diced
1 Green pepper, diced
1 Red pepper, diced
8 Medium tomatoes, skinned, seeded and chopped
1/2 C. White wine
1 Clove garlic, minced
3 T. Fresh basil, chopped
Salt
Fresh ground black pepper
Procedure:
In a large skillet, heat oil and cook onions until soft
Over high heat add the peppers, tomatoes, wine and garlic, cook for 2
minutes
Add cooked pasta and basil toss together
Season to taste and serve hot
Notes:
Green and red peppers are optional
You can add some protein such as chicken or seafood (scallops, shrimp,
fish, etc)
Pasta of your choice
Ingredients:
1/2 Purple onion, sliced
1/2 Green pepper, sliced
1/2 Red pepper, sliced
1 Stalk celery, sliced on a angle
6 Button mushrooms, quartered
1 Small carrot, juellienne
2 T. Extra virgin olive oil
2 C. Tomato sauce
1/2 C. Fresh parmesan cheese
2 to 4 Portions cooked pasta
2 T. Fresh basil
Procedure:
Sauté the veg. in the oil
Add the sauce, pasta and basil, heat and toss together
Garnish with cheese
Notes:
You can add other veg such as broccoli, cauliflower, zucchinni, etc.
Pasta of your choice
Pasta with a Garlic Cheese Sauce:
Ingredients:
2 to 4 Portions of cooked pasta
2 T. Fresh parsley, chopped and washed
4 C. Bechamel sauce, thin
2 Cloves garlic, minced
1 C. Grated swiss, mozza., jack., and or cheddar cheese
1 T. Olive oil
3 Shallot, fine diced
Procedure:
Sauté shallots in oil until soft
Add sauce and garlic, when hot add the cheese, melt and stir
Add pasta and parsley and serve hot
Notes:
You can add other food items such as ham, bacon, other meats, veg.,
etc.
Start with a thin white sauce because the cheese will thicken it up
Use pasta of your choice, I suggest a short noodle such as elbow
Ingredients:
1 C. Espagnole sauce
1/4 C. Heavy cream
2 to 4 Hot chili peppers
1/2 C. Beef jerky, julienne
1/2 C. Tomatoes, peeled, seeded, chopped
1/2 Mango, peeled, chopped
4 T. Fresh coriander, chopped
1/4 oz. Ganga (marijuana), optional
2 oz. Jamaican rum
2 to 4 Portions of dreadlock pasta, (spiral pasta)
Salt
Fresh ground black pepper
Procedure:
Combine Espagnole sauce, cream, chili peppers and beef jerky then
simmer for 2 minutes
Over high heat add tomatoes, mango, coriander, ganga, rum and pasta,
toss together
Season to taste, serve hot
Notes:
Keep away from the voodoo dolls and the black magic
You can use other Caribbean ingredients, e.g. pineapple, coconut,
etc.
