Orange Liqueur
Marinated Strawberries:
Ingredients:
2 pints Fresh Strawberries, washed and quartered
3 T. Confectioners' sugar
3 T. Orange liqueur
1 Orange, juice and zest reserved
1 Lemon, juice and zest reserved
1 Vanilla bean
1/2 pint Whipping cream
1 pint Vanilla ice cream
Procedure:
Toss the strawberries with the confectioners' sugar, liqueur, juices
and zest. Allow to marinate refrigerated for 30 minutes
Split the vanilla bean open with a knife and scrape out the seeds. Add
the seeds to the whipping cream in an ice cold bowl and whip the cream to
soft peaks just prior to serving
Serve one scoop of ice cream in a martini glass, spoon some marinated
strawberries over the ice cream and serve with a dollop of whipped cream
on top
Notes:
Can be garnished with sprigs of fresh mint, orange twists, chocolate
sprinkles or curls, etc.
Lime juice can be used in place of the lemon
Brown Sugar
Strawberries:
Ingredients:
2 pint Strawberries (4 cups)
2/3 C. Plain yogurt
2/3 C. Loosely packed brown sugar
Procedure:
Rinse and dry the strawberries, but do not hull
Place strawberries in serving bowl
Place yogurt and brown sugar in 2 separate bowls
To eat, dip the strawberries into yogurt, then into brown sugar
Serve and garnish
Notes:
Can be garnished with sprigs of fresh mint, chocolate sprinkles or
curls, whipped cream etc.
Strawberry yogurt can be used in place of the plain
Glazed Strawberry
Yogurt Squares:
Ingredients:
2 C. Bisquick
3/4 C. Sugar, devided
2 T. Butter
1 C. Strawberry yogurt
2 Eggs
1/2 t. Vanilla
3 Fruit roll-ups strawberry fruit snacks
Procedure:
Mix Bisquick, 1/4 cup sugar and the butter with fork until crumbly.
Reserve 1/4 crumb mixture, press the remaining mixture into the bottom of
a ungreased 8 by 8 by 2 inch pan
Bake in a preheated 374°F oven for 10 to 15 minutes, or until
light brown
Mix 1/2 cup sugar and remaining ingredients except the fruit roll-ups,
pour over the baked layer
Completely cover the top of yogurt mixture with opened fruit roll-ups,
cutting to fit if necessary
Sprinkle with reserved crumb mixture
Return to the oven and bake for about 20 minutes longer, or until when
a wooden pick in center comes out clean
Cool 15 minutes. Cut into squares
Serve and garnish

Can be garnished with fresh strawberries, whipped crean, sprigs of
fresh mint, chocolate sprinkles or curls, etc.
Strawberries in
Champagne:
Ingredients:
2 T. Fresh lime juice
4 T. Honey
Fresh mint
1 quart Strawberries, washed and hulled
Chilled champagne
Procedure:
Heat the lime juice and honey until the honey melts
Add two large sprigs of mint. Remove from heat and steep for 5
minutes. Remove the mint
Put the strawberries in a bowl, add the sauce, toss gently and
refrigerate at least 20 minutes
Divide the berries amoung six dessert dishes. Pour on champagne and
add a mint garnish
Serve and garnish
Notes:
Sparkling white wine can be used in place of the champagne
Can also be garnished with choloate sprinkles or curls, whipped cream,
etc.
Ingredients:
2 C. Strawberries, halves
1/4 C. Sour cream
1/4 t. Ground cinnamon
1/4 C. Brown sugar, packed
Procedure:
Put the strawberries in an ungreased shallow 1 1/2 quart baking dish
Combine the sour cream and cinnamon, then spoon over the berries
Sprinkle with brown sugar
Broil until bubbly, about 3 to 4 minutes
Serve and garnish
Notes:
Serve over cream if desired
Can be garnished with sprigs of fresh mint, sprinkles or curls of
chocolate, etc.
