Ingredients:
1 1/2 C. Fresh basil leaves
2 Cloves garlic, minced
1/4 C. Pine nuts
3/4 C. Parmesan cheese
3/4 C. Olive oil
Procedure:
Put the basil into a food processor and purée until smooth
Add the garlic and nuts, continue to purée until smooth
Move the puréed ingredients to a mixing bowl and stir in the
cheese until thickened
Add the oil stirring constantly until the consistency of creamed
butter
Notes:
Parsley can be used in place of the basil, but the flavor will be very
different
Put a film of oil over the top, cover and refrigerate. Pour the oil
off before using and replace when finished
This product can be frozen for future use
Ingredients:
2 C. Extra virgin olive oil
2 Branches rosemary
6 Sprigs thyme
1 Clove garlic
1 Green chili pepper
6 Small red chili peppers
6 Black peppercorns
6 Juniper berries
Procedure:
Pour the oil into a pritty glass bottle, stoppered with a cork for
preference
Wash the herbs well and pat them dry with a clean towel
Peel and half the garlic
Place all the ingredients into the bottle of oil
Seal tightly and store at room temperature
Notes:
Do not use for a least 2 weeks
Do not stain
The cork can be sealed with a red sealing wax
Ingredients:
2 C. Strained cooked chick-peas
2/3 C. Tahin
3/4 C. Lemon juice
2 Cloves garlic, minced
1/4 C. Black olives, seeded
1 t. salt
3 T. Chopped parsley
Procedure:
Blend all the ingredients, except the parsley in a food processor
until they are smooth
Stir in the parsley until well mixed
Adjust the seasonings to taste
Notes:
Hummus is an Arabic and Greek dish made from cooked ckickpeas crushed
with sesame oil, sometimes with the addition of soy sauce
Can be served as a dip for raw vegetables, crudités, hors
d'oeuvres, rye toast fingers, etc.
They can be sold dried or precooked in cans
Chick-peas are also known as garbanzo beans, but they're also called
by the English word chiche, pronounced chee chee
Chickpeas are a bushy leguminous plant cultivated in southern Europe
for its rounded edible pealike seeds, which are enclosed in pods
Ingredients:
2 Parts Poached salmon, cooled and flaked
1 Part Mashed potato
Sautéd diced onion
Lemon juice
Egg for binding (if necessary)
Fresh dill, chopped
Salt
Fresh ground black pepper
Procedure:
Combine all the ingredients, seasoning to taste
Form the salmon mixture into patties
Heat some oil in a skillet to very hot
Cook the salmon cake on each side until browned and crispy
Garnish and serve
Notes:
Other types of seafood can be used in place of the salmon, for
example, crab, salt cod, etc.
Can be served with vegetables for an entrée, or on top of
greens for an appetizer
Garnish with lemon and fresh herbs, etc.
Ingredients:
Cubed bread
Garlic powder
Fresh herbs, chopped (thyme, parsley, oragano, etc.)
Parmesan cheese
Olive oil
Procedure:
In a large mixing bowl combine and toss together all the ingredients,
except the oil
Pour enough oil around the sides of the bowl to coat the bread and
toss to absorb
Place a single layer of the bread cubes on a baking sheet. Bake in a
preheated 350°F oven until browned and dried out, tossing often
Cool and store at room temperature for service
Notes:
Croutons are used to garnish certain preparations (soups, green
salads, scrambled eggs, omelettes, buttered spinach) and are included in
composite garnishes (such as grenobloise)
Fresh garlic tends to burn while the bread is
toasting
Onion powder can be used in place of, or with the garlic powder
Clarified butter can be used in place of the olive oil
