Ingredients:
Rye bread
Mustard
Shaved smoked meat, or corned beef
Sauerkraut
Swiss cheese, sliced
Procedure:
Spread mustard on one side of two slices of brad for each sandwhich
Heat the meat and sauerkraut in a hot skillet
Place the warm meat and then sauerkraut on top of one of the bread
slices. Top with a slice of cheese and another slice of bread with the
mustard sides facing in
Cut in half, garnish and serve
Notes:
Use Tancook sauerkraut where possible
Serve with a side of frech fries, potato chips, salad, etc.
Pumpernickle can be used in place of the rye bread
Ingredients:
3 Slices white, or whole wheat bread
Soft Butter
Mayo
1 Tomato, sliced
4 Bacon , slices, cooked
Fresh crisp iceburg lettuce
Turkey breast, cooked, sliced
Procedure:
Toast the bread to desired doneness, then spread a layer of butter and
mayo on one side of all the slices
On one slice of bread place some tomato, bacon and lettuce, then top
with a second slice of toast
On top of the second slice of toast place the turkey and some more
lettuce, finally top with the tird slice of toast
Cut the sandwich into four pieces, from one corner to the other
Serve and garnish
Notes:
Try replacing the turkey with ham and cheese
Can be served with a side of frech fries, potatoe chips, salad, etc.
Garnish with pickles, vegetables, etc.
Ingredients:
6 oz. Chichen breast, cooked, diced
1 T. Celery, fine diced
1 T. Onion, fine diced
Pitch fresh sage, chopped
Dash of salt
Fresh ground black pepper
4 T. Mayonnaise
1 T. Soft butter
Fresh crisp iceburg lettuce
Bread
Procedure:
Combine the chicken, celery, onion, seasonings to taste, until mixed
Add mayo to moisten, reserving some for the bread
Spread butter along one side of bread, spoon some of the chicken
mixture on top and a layer of lettuce
Finish by placing a second buttered (and mayo) slice of bread on top.
Slice, garnish and serve
Notes:
Other meats such as turkey can be used in place of the chicken
Use bread such as white, whole wheat, soft flour tortilla, pita,
croissant, Frech, rolls, etc. can be used
Can be served with a side of frech fries, potatoe chips, salad, etc.

Ingredients:
2 slices White, or whole wheat bread
1 T. Soft bitter
1 T. Mayonnaise
4 Slices bacon, cooked
1/2 Tomato, sliced
Crisp iceburg lettuce
Procedure:
Toast the bread and spread the butter and mayo on one side of both
pieces
Place the remaining ingredients on one of the breads and top with the
other to form a sandwich
Slice in half on a diangle, serve and garnish
Notes:
Other untoasted breads such as croissants, pita, french, etc. can be
used in place of the "sliced"
Other food items such as cheese, sandwich meats, etc. can be added
Can be served with a side of frech fries, potatoe chips, salad, etc.
Be sure the bacon slices are cooked crisp
Garnish with pickles, vegetables, etc.
Ingredients:
1 Egg
2 T. Milk
1 oz. Ham, diced
1 t. Onion, fine diced
1 t. Green pepper, fine diced
Salt
Fresh ground black pepper
2 T. Soft butter
2 Slices white, or whole wheat bread
Procedure:
Beat the egg until well mixed
Stir in the remaining ingredients and season to taste
In a skillet, heat half the butter and pour the egg mixture in
Cook half way on one side, using a spatula to lift the sides, so that
they do not stick
Flip the egg mixture, to finish cooking on the second side
Place the cooked egg mixture on a slice to toasted, buttered bread and
top with another
Slice the sandwich from one corner to the opposite
garnish and serve
