Rotini With Smoked Chicken And Asiago:
Ingredients:
1 T. Olive oil
2 T. Shallots, diced
2 Mushrooms, sliced
2 oz. Vegetable stock
1 C. Heavy cream
1 t. Soy sauce
8 oz. Smoked, boneless, skinless chicken breasts, sliced
1 t. Fresh sage, chopped
3 T. Asiago cheese, grated
Salt
Fresh ground black pepper
3 C. Cooked Rotini pasta
Procedure:
In a large skillet heat the oil, then sauté the shallots and
mushrooms until they are tender
Add the stock and reduce it by half
Add the cream and soy sauce and then bring it all to a boil
Reduce the heat to a simmer and cook until the sauce begins to reduce
and thicken
Add the chicken, sage and cheese, bring back to a low boil
Season to taste
Add the cooked pasta and reheat
Serve and garnish
Notes:
Other types of pasta can be used in place of the Rotini
Fresh chicken can be used in place of the smoked. In such a case,
sauté the chicken along with the vegetables in order to cook it
Can be garnish with sprigs of fresh sage, paprika, chives, etc.
Ingredients:
1 Italian sausage
1 C. Tomatoe sauce
3 C. Penne pasta, cooked and cooled
1 T. Fresh basil, chopped
4 T. Parmesan cheese
Procedure:
In a preheated 350°F oven, cook the sausages to desired doneness
Meanwhile in a skillet, heat the tomatoe sauce until hot
Add the pasta and herbs, then reheat to the boiling point
Place the pasta on two plates, top each one with a sausage that has
been cooked and sliced on a bias.
Top with the cheese
Garnish and serve
Notes:
Sausages made from deer meat can be used in place of the Italian
Other fresh chopped herbs, such as oragano, thyme, corriander, etc.
can be used in place of the basil
Garnish with a sprig of basil, or any other herb that has been
used
Spaghetti With Seafood Sauce:
Ingredients:
3 T. Olive oil
1 onion, diced
1 Clove garlic, minced
1/2 Lbs. Spaghetti noodles
2 1/2 C. Tomato sauce
1 T. Tomato puree
1 t. Dried oregano
1 Bay leaf
1 t. Sugar
2 C. Cooked shrimp, peeled
1 T.Lemon juice
3 T. Fresh parsley, chopped
2 T. Butter
Salt
Fresh ground black pepper
4 whole cooked shrimp, to garnish
Procedure:
Heat the oil in a pan and add the onion and garlic. Fry over a
moderate heat for 6-7 minutes, until the onions have softened
Meanwhile, cook the spaghetti in a large pan of boiling salted water
for 10-12 minutes until al dente
Stir the tomatoe sauce, tomato puree, oregano, bay leaf and sugar
into the onions and season well. Bring to the boil, then simmer for 2-3
minutes
Add the shellfish, lemon juice and 2 Tbsp of the parsley
Stir well, then cover and cook for 6-7 minutes
Meanwhile, drain the spaghetti when it is ready and add the butter to
the pan
Return the drained spaghetti to the pan and toss in the butter
Season well
Divide the spaghetti among four warmed plates and top with the seafood
sauce. Sprinkle with the remaining 1 Tbsp parsley
Garnish with whole prawns and serve immediately
Notes:
Other types of pasta can be used in place of the spaghetti noodles
Do not over cook the pasta
Can also be garnished with lemon, sprigs of frsh herbs, etc.
Ingredients:
1 Large Spaghetti squash
Cooked pasta
8 oz. Cottage cheese
16 oz. Mozzarella, grated
8 oz. Parmesan, grated
1 Quart Spaghetti sauce
Procedure:
Cook squash. Fork out insides into a giant cassarole dish, along with
the cooked pasta
Add cottage cheese, half of the mozzerella and parmesan, sauce
Mix it until it looks like it's name
Top with remaining cheese
Bake at 350°F in a preheated oven, for 45 minutes
Notes:
Any type of pasta can be used
Do not over cook the pasta
Ingredients:
1/2 Onion, chopped
1 Clove garlic, minced
8 oz. Can chopped tomatoes
1 pinch Dried oregano
3 Mushrooms, sliced
4 oz. Cooked mussels (8 oz. in shell)
1 1/2 oz. Pasta, dry weight
Procedure:
Place onion, garlic, tomatoes and oregano in small saucepan
Simmer uncovered for 10 mins.
Add mushrooms, continue to simmer until liquid is reduced and
sauce thickened
Add mussels and heat through gently
While sauce is cooking, boil pasta. Drain
Serve with the sauce and garnish
Notes:
Use pasta shape, or style of your choice
Garnish with lemon, parsley, paprika, etc.
Do not over cook the pasta, or the mussels
