Ingredients:
2 Slices Whole wheat bread
1 Banana, peeled, sliced
2 T. Peanut butter
2 T. Whole fruit jam
Procedure:
Spread one side of one slice of bread with the peanut butter
Sread the second slice of bread with the jam, on one side
Place the sliced banana on top of the peanut butter and put the other
slice of bread on top to form a sandwich
Slice off the crust and cut into 4 pieces in a x fashion, from one
corner to the diagonal, to form 4 triangles
Serve and garnish
Notes:
Any type of jam or jelly can be used, but I suggest a whole or double
fruit kind. Look on the list of ingredients on the label the see that the
fruit is the first ingredient and not a sugar product
Use smooth or chunky peanut butter
Serve with any other lunch item and a beverage
Garnish with grapes, cheese sticks, etc.
Ingredients:

2 Slices processed cheese or 1/4 C. Grated cheddar
2 T. Butter
Procedure:
Form a sandwich with the bread and cheese
Butter the outside of each slice of bread
Grill each side of the sandwich in a large skillet over med-high heat
until they are golden brown
Slice, serve and garnish
Notes:
You can add cooked sliced ham, bacon, etc. to the center of this
sandwich
Any type of cheese can be used, I suggest an orange cheddar
Slice the finished snadwich into 2 or 4 slices
Serve garnished with other lunch items, such as salad, fresh fruit,
vegetable sticks, etc.
Ingredients:
8 oz. Boneless, skinless, chicken breast
1/2 C. A.P. Flour, seasoned
2 Eggs, beaten with 2 T. Milk (egg wash)
1/2 C. Dried bread crumbs, seasoned
Salt
Fresh ground black pepper
Vegetable oil
Procedure:
Cut the chicken into long strips of any size
Dip each piece of chicken into the flour, then the egg and finally the
bread crumbs, to form a coating. This is called the breading procedure
In a large skillet heat enough oil on med-high heat, to pan fry the
breaded chicken strips, or use a preheated 350°F deep-frier
Cook the chicken until golden brown and fully cooked in the center
Serve and garnish
Notes:
The bread crumbs can be from graham crackers, corn flakes, soda
crackers, or dried bread. use a food processor to form the crumbs, or buy
them from a store
Serve with other food items such as french fries, salad, fresh fruit,
vegetable sticks, etc.
Ingredients:
2 C. Iceburg and or Romain lettuce, chopped
1/2 Red pepper, chopped
1/2 Green pepper, chopped
1/2 Carrot, grated
1/2 Cucumber, chopped
1/2 Tomato, chopped
1/2 Onion, chopped
Cold cuts, julienne
Cheeses, julienne
1 Hard boiled egg, sliced
Procedure:
Form a salad by placing the lettuce on a plate or in a bowl and
placing all the vegetables on top
Place the meats and cheeses on top of the salad
Arrange the sliced boiled egg on the top of the final product
Serve and garnish
Notes:
Use cold cuts such as turkey, beef, salami, ham, etc.
Use cheeses such as cheddar, mozza, swiss, etc.
Serve with salad dressing of your choice
The Checker Board Sandwich:
Ingredients:
1 Slice white bread
1 Slice whole wheat bread
Sandwhich fillings of you choice
Procedure:
Prepare the sandwich the way you would under normal conditions, with
the middle or filling of your choice
Use the white bread for one side and the whole wheat for the other
thinly slice the crust off to form one large square
Cut the sandwich with 2 cut (1 vertical and 1 horizontal) to form 4
small squares
Looking at the sandwich as a whole, take the upper left hand corner
and the lower right hand corner, then turn them upside down to show thier
opposite colored breads
Serve and garnish
Notes:
Serve the sandwich garnish with any number of lunch items such as
potato chips, fresh fruit, vegetable sticks, cheese, etc.
