Ingredients:
2 C. Plain, or flavoured yoghurt
2 C. Fresh fruit, peeled, seeded, chopped
Procedure:
Combine all the ingredients together until well bended
Serve and garnish
Notes:
Use any kind of fruit (or combinations), such as apples, grapes,
melons, berries, oranges, etc.
Garnish with grated coconut, chopped nuts, chocolate sprikles,
raisins, etc.
Can be stored under refridgeration for a few hous until needed
Ingredients:
1 3/4 C. Sifted cake flour
2 t. Double acting baking powder
1/2 t. Salt
1 T. Sugar
3 Eggs yolks, beaten well
2 to 7 T. Butter, melted
1 1/2 C. Milk
Other ingredients such as one of the following (optional)
- 1/2 C. Fresh fruit or berries
- 1/4 C. Raisins or puréed dried fruit
- 1/4 C. Fine chopped nuts or coconut
- 1/4 C. Grated semi-sweet chocolate
- 1/2 C. Shredded cheese
- 1 C. Diced cooked ham, bacon, or sausage
3 Egg whites

Procedure:
Sift the first 4 dry ingredients together
Make a hole in the middle of the dry sifted ingredients. Pour in the
liquid ingreds. Combine them with a few swift strokes
At this time you might want to stir in one of the other ingredients
Beat the egg whites until stiff but not dry and they form soft peaks
Fold the whites into the batter until they are barely blended
Cook the batter in a waffle iron
Serve and garnish
Notes:
The batter should have a pebbled look, similar to muffin batter
Follow the instruction with your waffle iron for cooking of the batter
Serve the waffles garnished, topped with such items as whipped cream,
butter, fresh fruit, sweet dessert sauces, syrups, etc.

2 Eggs
2 Slices of whole wheat bread
Butter
Salt
Fresh ground black pepper
Procedure:
With a cookie cutter, remove the center out of the bread
Butter both side of the bread
Place the bread on a non-stick skillet heated over med-high heat
Crack each egg into each hole of the bread, cook until browned on the
fist side, flip them over and finish on the second side
Serve and garnish
Notes:
Be sure to cook to desired doneness in the center
Home made or thick sliced bread is best with this recipe
Can be served with other breakfast items such as bacon, sausage, home
fries, ham, fresh fruit, etc.

2 T. Milk

In a medium size bowl crack the eggs into it. Add the milk, salt and
pepper to taste and beat together
Dip each slice of bread into the egg mixture and place them onto a
preheated, slightly greased, large non-stick skillet

The popular history behind French toast (aka German toast, American
toast, Spanish toast) is that it was was created by medieval European
cooks who needed to use every bit of food they could find to feed their
families. They knew old, stale bread (French term "pain perdu" literally
means "lost bread") could be revived when moistened and heated. Cooks
would have added eggs for additional moisture and protein. Medieval
recipes for "french toast" also suggest this meal was enjoyed by the
wealthy. Cook books at this time were written by and for the wealthy.
These recipes used white bread (the very finest, most expensive bread
available at the time) with the crusts cut off, something a poor, hungry
person would be unlikely to do
Ingredients:
2 oz. Ceddar cheese
2 oz. Mozzarella cheese
2 oz. Marble cheese
6 oz. Fresh fruit, peeled, seeded, chopped
Procedure:
Cut all the cheeses into triangles or sticks
Using 2 or 3 types of fresh fruit, have it all prepared
Display the cheeses around a plate with the fruit in the center
Serve and garnish
