Soups: No
cream based recipes here, but maybe some pureéd soups. While makimg
low-fat soups you should watch what kind of thickener that is used. Stay
away from roux (flour and butter, or a fat), cooking peeled, sliced
potatoes in the soup can act as a thickener. I would also suggest to stay
away from soups with cheese in them such as broccoli with cheddar, french
onoin, etc. unless a low fat cheese is used.
Soups can be served hot or cold in which case serve them at the
appropate tempatures, being hot, served piping hot or cold, served ice
cold. Always garnish the soup being served with such iteams as sprigs or
chopped fresh herbs, crutons, grated vegetables, ice if cold,
etc.

Salads: It
is hard to believe that a salad has to be prepared in a low fat fassion.
However if you were to use the wrong ingredients, something to looks
harmless could really be killing you. One thing to worry about while
preparing a low-fat salad is the dressing. When making a vinegarette about
2/3 of the oil can be replaced with chicken stock and the dressing can be
thickened with corstarch and water or arrowroot.
There are foods, such as avacado with alot of natural fats in them.
There are other foods with what is called "hidden fats" in them, so know
your ingredients and try to stay with low fat foods. Most vegetables are
safe to use and try to use vegetable based oils and other
products.

Pasta:
Pasta themselves are farely low in fat, but it is the other ingredients
such as the sauce that adds the fat count to these dishes. Stay away from
the cream based pasta such as Alfredo and from such other ingredients as
ground beef and processed products.
When using pasta keep an opened mind to its many kinds of flavours and
styles. The noodle also come in a dry or fresh (much less cooking time)
versions, always remember not to over cook them. The term you are looking
for is "Al dente".
Pasta is high in carbohydrates and is a good sorce of energy. With a
wide range of noodles and other ingredients you should be able to come up
with a new dish for every day of the year. If you are anything like me
there is nothing like a big plate of spaghetti for breakfast.

Entreé: Some of the lowest fat foods are skinless chicken breast,
seafoods and lean pork, such as pork loin or tenderloin. That's right,
it's not the "Big Mac", containing 55 grams of the stuff. So I do not see
the point in ordering the doubled patty burger, large fries and a diet
coke.
You will find that while eating low-fat meals the feeling of being full
is not there. It is the fat its self that gives people the "full feeling"
and also keep the portions down to the proper size. For example the
average weight portion for a beef serving is only about 4 oz. So that 12
oz. steak that some people will eat is 4 time the required amount and
fat.

Desserts:
Yes desserts have to be low in fat too. After all are going to sit down
and eat a bunch of butter or drink a big glass of 35% cream? Some of these
recipes can be high in calories, but hay can't you burn those off in the
"run" of a day? It is the fat in foods that gives you the full feeling, so
a low fat meal should not give you that feeling unlees you have over done
it.
If a recipe has half the normal amount of fat does not give you the
right to eat twice as much. Remember that moderation is the key to a
succesful diet and you will feel better if you able to stand up at the end
of a meal.
Here as well as other places you have to watch out for what is called
"hidden fats". For example alot of pastries are loaded with butter, lard
or other fats such as oils, etc. So be carefull of what you eat and know
your food and thier ingredients.
