Ingredients:
1 C. Roquefort cheese, or part roquefort and part cream cheese
2 T. Butter
1 T Brandy
1 t. Paprika
A few grain of cayenne
Worcestershire sauce
3/4 C. Nuts, chopped
Fresh herbs, chopped
Procedure:
Blend the first 6 ingredients together, then roll into 1 inch balls
Roll the balls in the nuts and herbs, serve with cracker, fresh fruit
garnish, wine, etc.
Notes:
Cream cheese can be used for a milder taste
Prepare and serve the cheese at room temp.
Toasted almonds, walnuts, pecans, pine, chashews, etc. can be used
Fresh herbs of choice
Ingredients:
1 Small Edam cheese
1 t. Worcestershire sauce
1 t. Red wine
1 T. Prepared mustard
1 T. Fresh herbs, chopped
Procedure:
Hollow out the edam, saving the shell to the side for future use
Mix together the cheese and the rest of the ingredients
Refill the saved cheese shell with the cheese mixture, serve garnished
with toasted crackers
Garnish with fresh herbs, fresh fruit, grapes, wine, etc.
Notes:
Edam is a Dutch cow's milk cheese, containing 30 to 40% fat, in the
shape of a large ball with a yellow or red waxed coating
It is a semihard pressed cheese and is firm butelastic, free of holes
and light yellow to yellow ochre in colour, depending on its degree of
maturity
Edam is described as "young" after two or three months in a dry
cellar, when it has a sweet nutty flavour
After 6 months it is "semimatured", with a stronger flavour
At the end of a year's maturing it is "matured" and has a slight bite
Gouda cheese can be used in place of edam with this recipe
Instead of refilling the cheese shell, blend in enough cream into the
cheese mixture. so that it spreads over toasted crackers
Ingredients:
3 oz. Cream cheese
3 T. Sour cream
Salt
Red pepper
Procedure:
Mix the cream cheese and sour cream together until soft
Season to taste
Add any of the additions from below
Additions:
1/2 t. Onion juice
1 t. Chives, chopped
1 T. Lime or lemon juice
1 T. Fresh herbs, chopped
1 T. Celery and/or green pepper, fine diced
2 T. Green olives, diced
3 T. Bacon bits
1 t. Anchovy or fish paste
1/2 C. Nuts, chopped
1 T. Caviar
Notes:
Some blue cheese can be mixed with the cream cheese
Other additions can be added to taste
Used as a dip for raw vegetables, fresh fruit, crackers, hors
d'oeuvre, etc.
If this recipe is too thick, mix in a little more sour cream
Ingredients:
4 oz. Roquefort cheese
4 oz. Cream cheese
2 T. Butter
2 T. Sour cream
1 Small Onion, grated
Worcestershire sauce
2 T. Sherry
Procedure:
Mix all the ingredients together until they smooth and spreadable
Add other additions of your choice from below
Additions:
1 t. Caviar
1 T. Lime or lemon juice
1 t. Fresh herbs, chopped
1 t. Fresh garlic, minced
2 T. Smoked salmon, pureé

Notes:
Spread cheese on crackers, bread, etc. for canapes
Mix and spread the cheese at room temp.
Garnish with fresh fruit
Deep Fried Cheese
Sticks:
Ingredients:
1 Lbs. Mozzarella cheese
Flour
Egg Wash
Bread crumbs
Salt
Fresh ground black pepper
Fresh herbs (parsley, basil, etc.), chopped
Procedure:
"Cut the cheese" into 1 oz. sticks
Season the flour and bread crumbs to taste
Add the herbs to the bread crumbs
First dip then into the flour, then the egg wash and finally into
the bread crumbs. This is called the breading procedure
Deep fry in preheated 375°F oil until golden brown
Garnish and serve with a dip
Notes:
Do not cook the cheese too long
The breading procedure can be done twice
Other cheeses can be used such as cheddar, swiss, jarlsburg, etc.
Many different types of dips can be used such as salsa sauce, fresh
fruit pureéd, curry dip, bar-b-cue sauce, etc.
