Fruit Pancakes Or Griddle
Cakes:
Ingredients:
1 1/2 C. All-Purpose flour
1 t. Salt
3 T. Sugar
1 3/4 t. Double-Acting baking powder
1 or 2 Eggs, slightly beaten
3 T. Butter, melted
1 to 1 1/4 C. Milk
3/4 C. Fresh berries or diced fruit (optional)
Procedure:
Sift the flour before measuring and then sift the 4 dry ingredients
together
Combine the egg, butter and 1 cup of the milk until blended
Mix the wet ingredients quickly into the dry, do not over beat,
lightly stir in the berries just before cooking
Cook in a oiled skillet on med-high heat about a 2 oz. portion of
batter per pancake until the under side is brown and air bubbles appear,
flip and cook
Notes:
If the batter is a little to thick, use up to the rest of the milk to
thin
Do not worry if the batter has a few lumps in it, do not over mix
Use berries or fruit of your choice, fresh or frozen
Serve with maple or corn syrup and with other breakfast items such as
bacon, sausage, ham, eggs, toast, etc.
Ingredients:
4 C. Water
1 t. Salt
2 1/2 C. Rolled oats
Brown sugar
Milk or cream
Procedure:
Bring the water and salt to a boil
Add the oats and boil lightly, stirring continuously with a (wooden)
spoon, until the mixture thickens, about 15 minutes
Serve, then put on the top some brown sugar and hot or cold milk
Notes:
Other things can be added after cooking, just before serving such as,
diced apples with cinnamon, raisins, diced pears, peaches, etc.
Ingredients:
1 C. Rolled oats
1/4 t. Salt
1 C. Boiling water
3 T. Honey
1/2 C Raisins
1/2 C. Prunes, pitted, chopped
1/2 C. Dried apricots, chopped
1/2 C Nuts, chopped
1/2 C. Apple, fine diced
2 T. Lemon juice
Milk or cream
Procedure:
Soak overnight the oats, salt and water, covered
Before serving combine the oat mixture with the rest of the ingredients.
Serve with milk to desired texture
Notes:
Brown sugar can be used in place of the honey
Other fruits can be used (whatever you have on hand) such as cantaloupe,
honeydew, pears, grapes, etc.
Granola can be added when adding the milk
A certain amount of prep. can be done the night before, to save time in
the morning
Serve this recipe cold
Ingredients:
Apple, sliced
Cantaloupe, peeled, sliced
Honeydew, peeled, sliced
Kiwi, peeled, sliced
Strawberries, husked, sliced in half lengthwise
Procedure:
Wash all fruit before peeling and or slicing
Arrange the fruit one type at a time neatly around a plate, taking
care not to put two similar colors beside each other
Serve as a continental breakfast along with other food items such as,
croissants with jam,
tea or coffee, toast, etc.
Notes:
Other sliced fresh fruit of your choice can be used
You can sever a dipping sauce such as chocolate or raspberry along side
This plate can be eaten any time of day or as an appetizer
Scrambled Eggs And Bacon:
Ingredients:
12 Bacon slices
4 Eggs
1 oz. Milk
Salt
Pepper
1 T. Butter
Procedure:
Layer the bacon in a skillet and cook on med-high heat to desired
crispness
Beat the egg until well mixed, beat in the milk and season to taste
Just before the bacon is cooked, heat the butter in a skillet and cook
the eggs, stirring often, on medium heat until slightly moist
Serve the bacon and eggs on a plate with other accompaniments
Notes:
Other meats can be served in place of the bacon such as ham, sausage,
etc.
The egg can be cooked in other fashions such as poached, fried,
boiled, etc.
Serve with other breakfast items such as milk, juices, toast, grilled
tomato, hash browns, etc.
