Peanut Butter Fudge
- 1 jar (7oz.) Marshmallow Cream = (1 1/2 cups)
- 1 box 10X sugar = (3 1/2 cups)
- 1/2 jar peanut butter = (1 cup)
- 1/2 cup milk
Put marshmallow cream and peanut butter in a bowl. Mix
well. Boil the 10X sugar and milk for 5 minutes over low heat. Pour over
marshmallow/peanut butter mix, Beat together quickly, pour into a buttered 9X9"
pan. Let cool, cut and eat.
Note: This recipe came off the box of 10x sugar. Usually at
Christmas you will find jars of peanut butter, containers of marshmallow cream and boxes
of 10x sugar all together at one spot to make this candy. The thing is, 10x sugar costs a
lot when you buy it in the small boxes. Same with the 1 cup jar of peanut butter. And when
we make it, we usually make several batches to give some away. So one year mom measured
everything out and wrote down how much of each was need. Now you can buy a bag of 10x
sugar and a large jar of peanut butter and save some money.
Note: Several times mom started out making fudge and ended up with ice cream topping. The
trick to this recipe is to use a large pot to slow boil the sugar and milk. The fear is
that you will burn the mixture in the bottom of the pan, but you won't. Watch as the
mixture boils, you will see the bubbles get thicker the longer they boil, they will pop
much slower. If you do not let the mixture boil long enough, the candy will not set. I've
tried it this past holiday, you can't over boil the mixture, but you can under boil it. So
error on the side of longer time. Also, this fudge is not a real hard candy to begin with,
it will not get as hard as other fudges. I think the problem most people have with it is
they are used to regular fudge and this is actually a candy.
