Impossible Pumpkin Pie
(Microwave)
Grease a microwave pie plate (10x1 1/2 inches). Beat all ingredients until smooth - 1 minute in a blender or 2 minutes with beater. Pour into pie plate. Microwave on an inverted dinner plate on medium-high (70%) rotating pie plate 1/4 turn every 5 minutes until a knife inserted in center comes out clean. 22-28 minutes. Cool on a flat surface - DO NOT USE WIRE RACK) Note: Homemade Bisquick: We stopped using Bisquick years ago when I learned how to make it from scratch. All Bisquick really is is flour, baking powder, and a dash of salt. For 1 cup Bisquick use 1 cup flour - 1 tablespoon baking powder - 1/2 teaspoon salt... For the recipe above 1/2 cup flour - 1/2 tablespoon baking powder - 1/4 teaspoon salt. My aunt has high blood pressure, so when we cook for her we skip all salt and the recipe still comes out ok. So you can use it or not, it won't effect the taste or texture of the recipes. |
