Spiced Peach Jam
This jam won second prize in the 2005
Rockton World's Fair !
6 cups prepared fruit (one small basket Ontario peaches)
3 tablespoons fresh lemon juice
3/4 teaspoon ground allspice
3/4 teaspoon cinnamon
3/4 teaspoon ground cloves
8 1/4 cups white sugar
1 box fruit pectin
3/4 teaspoon margarine or butter
Peel, pit and finely chop peaches. Measure 6 cups into an 8 or 12 quart saucepot. Stir in lemon juice and spices.

Measure sugar into a separate bowl. Stir fruit pectin into fruit in saucepot. Add margarine (this reduces foaming). Bring to a full rolling boil on high heat, stirring constantly. Quickly stir in all the sugar. Return to a full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with a metal spoon.

Ladle into hot sterilzed jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids.
Process in a boiling water bath for 10 minutes.
Makes 4-500 ml jars.
