Dressing for Potato Salad
2 teaspoons Dijon mustard
2 tablespoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup less 2 tablespoons extra-virgin olive oil
Prepare this dressing to use right away as it will not keep well.

In a small bowl, mix together mustard, white wine vinegar, salt and pepper.

Gradually whisk in olive oil until well blended.

Makes enough dressing for 2 pounds potatoes.
