You can't find pickled beets like these in the supermarket. They are made with cider vinegar which gives them a very unique taste!
Spiced Beets
3 quarts small beets
1 pint cider vinegar
2 cups white sugar
3 teaspoons ground allspice
12 whole cloves
Boil beets until tender and then peel in cold water.
As fast as beets are peeled, drop them into hot sterilized jars.
Combine vinegar and sugar and boil for 3 minutes.
Into each jar (pint) of beets, put in 1/2 teaspoon allspice and 4 whole cloves.
Pour in boiling vinegar and seal.
