This is a great pasta dish. You can substitute almost any other pasta (spaghetti, rigatoni etc.) for the penne if desired.
Penne Carbonara
1/4 cup whipping cream (35%)
3 cups penne pasta
1 28oz can diced tomatoes
2 shallots, diced
1/2 cup diced cooked ham
1/2 teaspoon oregano
1 teaspoon worcestershire sauce
2 eggs, lightly beaten
1/3 cup grated parmesan cheese
Cook penne according to directions on package.
Combine tomatoes, green onions, zucchini, ham, oregano and worcestershire sauce in large saucepan.
Mix together eggs and cream.
Pour into tomato mixture and stir.
Cook, stirring over medium heat until slightly thick (do not boil).
Stir in penne, then cheese and heat through.
