Mushroom Rolls
12 slices thin, nonfat white bread, crusts removed
Vegetable cooking spray
1 pound mushrooms, minced
3 tablespoons all-purpose flour
1/2 teaspoon salt
3/4 cup evaporated skim milk
3 green onions, minced
1. Preheat oven to 400 degrees F.

2. With rolling pin, roll each slice of bread until very thin; set aside.

3. Coat 12-inch, heavy, nonstick skillet with cooking spray.

4. Add mushrooms and saute 4 to 6 minutes or until soft. Partially cover if necessary.

5. Blend in flour, salt and milk. Continue stirring over heat until mixture begins to thicken.

6. Mix in green onions.

7. Spread mixture evenly on each slice of bread. Roll up jelly-roll style. Arrange seam side down on cookie sheet.

8. Bake 10 minutes or until beginning to brown. Slice rolls in thirds and serve.
