| Meatless Lasagne | ||||||||||||||||||||||
| 2 tablespoons olive oil 2 cloves garlic, minced 1 small onion, finely chopped 1 pound ricotta cheese 1 cup (or more to tase) mozzarella cheese |
1 pkg frozen chopped spinach, thawed and well drained 2-1/2 cups pasta sauce 2-1/2 cups water 9 "oven ready" lasagne noodles |

| Heat olive oil in saucepan; add garlic and onion and cook until tender. In separate bowl, combine ricotta cheese, spinach, 1/2 cup mozzarella cheese. Add the garlic and onions and mix well. In a separate bowl, combine pasta sauce and water and mix well. Using a lasagne dish (13X9" baking dish), pour in 1/3 of the sauce mixture. Top with 3 (or as many as you need to cover the sauce) lasagna noodles. Spread half of the cheese mixture over the noodles. (if you really like cheese, you can sprinkle additional mozzarella cheese at this point) Top this with 1/2 of the remaining pasta sauce. Add another layer of lasagne noodles. Spread remaining cheese mixture over noodles (and more mozzarella if desired). Top with another layer of lasagne noodles, remaining pasta sauce and 1/2 cup (or more as desired) mozzarella cheese. Cover and bake at 350 degrees F for 45 minutes. Let stand 10 minutes before serving. |
