| Ruth's French Onion Soup | ||||||||||||||||||||
| 1 garlic clove, finely chopped 1/2 teaspoon salt 1/4 teaspoon pepper Slices of french bread (baguette) |

| 1 1/2 cups sliced onions 2 cans Campbell's Consomee (don't use beef broth, use consomee) 2 cups water 1/2 cup butter Guyere Cheese-grated (use Mozarella if you prefer, it's less expensive) |

| Melt butter in heavy saucepan. Add onions. Cover and brown SLOWLY, stirring occassionally until onions are deep brown. Remove from heat and stir in the rest of the ingredients. Return to heat and stir until soup comes to a boil. Simmer, covered for 15 minutes. Ladle soup into onion soup bowls. Carefully place a thin slice of french bread on top of the soup. Sprinkle grated cheese on top (to taste). Place under broiler until cheese is melted and beginning to brown. Serve immediately while still very hot. Serves 4 - 5 |
