Thanks again to "Prissy" for e-mailing us another sweet delight! I couldn't find anything called "coconut snow" in my supermarket, so I used "sweetened featherstrip coconut". The texture may not have been exact as it did not have the usual heaviness of a pound cake,  but I'm sure the taste was the same!  Enjoy!
Coconut Snow Pound Cake
3 sticks (3/4 lb) soft margarine
6 egg yolks (beaten)
1/2 cup "coconut snow"
2-1/2 cups flour
6 egg whites (beaten)
2 cups sugar
1 cup sour cream
1 tablespoon almond extract
1/4 teaspoon baking soda
1. Cream together the margarine and sugar. Add egg yolks and sour cream and mix well.
2. Sift flour, baking soda and coconut snow then add to the cream mixture.
3. Fold in the beaten egg whites.
4. Pour into a greased and floured pan.
5. Bake at 325 degrees for 1 hour and 15 minutes.
6. Spread the following icing over the cake while it is hot from the oven:


ICING

Mix together thoroughly the following ingredients and spread over HOT cake:

a) 1/2 stick (1/8 pound) soft margarine
b) 1-1/2 cups powdered sugar
c) 1-1/2 teaspoons vanilla
d) 1-1/2 tablespoons lemon juice
