Chicken Teriyaki
2 broiler chickens, quartered
1 8-oz. jar of orange marmelade
1/2 cup soy sauce
1/4 cup olive oil
2 tablespoons sugar
2 tablespoons white wine vinegar
1 clove garlic, minced
1 tablespoon chopped fresh ginger
Marinade: Combine soy sauce, olive oil, sugar, white wine vinegar, garlic and ginger.
Place chicken in marinade and chill for 4 hours or more (turn often).
Place chicken in a large shallow pan and bake, uncovered, at 325 degrees F. for 1/2 hour.
Remove from oven and spread marmalade over chicken.
Continue baking, uncovered, for another hour, basting every 15 minutes.
